Description
Yacon is a Peruvian root vegetable that is loaded with nutrition, but even better, it is mildly sweet with a very low glycemic index. We grow yacon organically and boil the juice down into a syrup. The resulting syrup tastes very much like molasses, and it can be used in the ways you’d use molasses, such as sweetening oatmeal or coffee or tea, or in cookies or other baked goods. The big difference between the two is that molasses has a glycemic index of 55 or more, while yacon syrup has a glycemic index of just 1.
Yacon is just becoming known in the U.S. but while it’s hard to find yacon products here, it’s not hard to find information about it. Just be aware, though, that we cannot endorse any unsubstantiated health claims about yacon. And it’s always a good idea to check with your doctor when adding a new food like yacon to your diet.
