Perhaps you’ve eaten a salad with colorful Nasturtium flowers included. Did you know the leaves are also edible? And not just edible, but also nutritious. They are exceptionally rich in the antioxidant lutein, contain phenolic compounds leading to a high ORAC score, and contain bioflavonoids, anthocyanins, polyphenols, beta carotene, vitamin C, and other essential vitamins and minerals. And on top of that they have a strong peppery taste that has been compared to water cress.
You could get the nutritional benefits of Nasturtium leaves by picking the leaves from flowers growing in your garden. But they’re only fresh for a little while. So we harvest a crop of Nasturtium leaves each year, freeze dry them, and then grind them into a powder. That results in a highly concentrated nutrient booster that can be used all year long as an addition to soups and stews, baked goods… lots of things. One caveat, though: we recommend some of our milder-tasting superfood powders for use in green smoothies. But the flavor of Nasturtium powder is strong enough that it probably won’t be hidden by the other flavors. Use it in a smoothie if you like (or if you’re really adventurous), but we think it’s probably best used in savory dishes.
