Who doesn’t love the sight of a field of sunflowers in the summer? And the seeds are delicious and nutritious. But most people don’t know that the leaves of the sunflower plant are also full of nutrition. Ordinarily, the large mature leaves of the sunflower are somewhat tough and hairy, so they’re not the best candidate for use in salads, as can be the case for some other nutritious leaves. But if the leaves are dried and crushed, and then further refined into a powder, you can get the benefit of the nutrients without having to deal with the unpleasant texture of the mature leaves.
The powder form makes it convenient to add the nutrition to a wide variety of foods, such as green smoothies, soups and stews, baked goods… the list is almost endless. The flavor is mild, so it is not noticeable in most foods. And since we freeze dry the leaves before crushing them, the nutrients are not destroyed by the heat that might otherwise be used to dry them.
50 grams of powder may not seem like a lot, but considering how much water is removed in freeze drying, it actually amounts to a highly concentrated source of nutrition. Just a single teaspoon adds a big nutrient boost.
