Freeze-Dried Caramelized Onions: Stun Y’uns(TM)

As I write this, these freeze-dried caramelized onions are, I think, my favorite product among everything we offer. There’s a lot of competition for that spot, but the wonderful deep savory cooked onion flavor is followed by a lovely bloom of sweetness, all wrapped up in a delicate crunch. It may be hard to imagine from the description, but it’s rare that someone tastes a sample and doesn’t go home with a bag. These onions have become a bit problematic for us; now we find it difficult to make enough to sell and still have enough left over for our own consumption!

Made with sweet yellow onions (the kind that starts with a “V”, but believe it or not, the V word is a trademark, so we can’t use it). The only ingredients are onions, olive oil, and a little salt. They’re so delicious, it’s hard to believe they’re also a healthy snack!
