Freeze Dried Raspberries

There’s nothing on earth like fresh-picked raspberries. Fill a bucket in the warm summer sun, bend your head down and inhale a deep whiff of the raspberries in the bucket — it’s something you’ll never forget. And as far as I’m aware, it’s impossible to preserve or duplicate. Even these freeze dried raspberries that we sell don’t deliver that kind of magic. Which is a shame, because raspberries are only ripe for a week or so, and the ones you get in the store have been shipped half way around the world and just never seem to measure up to the fresh ones. Even worse, they seem to start growing mold almost as soon as you get them home.

And that’s one way freeze drying can offer an advantage: properly stored in an impervious container, they’ll last a very long time (up to 25 years if an oxygen absorber is included). So you can enjoy your raspberries whenever you want. Just reconstitute them by steaming or soaking in a little water. This is especially useful if you want to cook with them. Or, as many people do, you can just snack on them in the dry form without reconstituting them.
