You probably know that sweet potatoes are among the most nutritious foods commonly used in our diet. Most people are unaware, though, that the leaves of the sweet potato plant are also highly nutritious. They’re great added to salads when they’re fresh, but of course they’re only fresh for a short time each year, if you can even find them for sale anywhere. But if the leaves are dried and crushed, and then further refined into a powder, you can get the benefit of the nutrients any time of year.
The powder form makes it convenient to add the nutrition to a wide variety of foods, such as green smoothies, soups and stews, baked goods… the list is almost endless. The flavor is mild, so it is not noticeable in most foods. And since we freeze dry the leaves before crushing them, the nutrients are not destroyed by the heat that might otherwise be used to dry them.
50 grams of powder may not seem like a lot, but considering how much water is removed in freeze drying, it actually amounts to a highly concentrated source of nutrition. Just a single teaspoon adds a big nutrient boost.
Sweet potato leaves have a nutritional value not too dissimilar to spinach, but they do have a different profile of specific individual nutrients. Look it up for yourself to be convinced.
